Round-grain rice varieties usually cook softer and tend to stick together, making them easier to eat with chopsticks. The grains of rice are round, soft inside, and when cooked, a lot of starch comes out of them, so they become sticky. It is mainly grown in northern Thailand, China and Japan. It is excellent for rice-based cakes and rice pudding, but it is also perfect for preparing Spanish paella. The Japanese variety is slightly rounder and has smaller grains, so it is ideal as a component of sushi dishes.
